I received a huge amount of basil in my CSA this week. Last year I did as well and froze most of it thinking I would add it to soups during the winter. Well I didn't. I pulled it out of the freezer in the spring, mostly forgotten about, and fully covered in freezer burn. Basil, meet my trash can.

This year I was determined to put it all to use. So, I decided to make pesto out of it. Have I made pesto before? Nope. But I thought it would be yummy on some paninis that I've had planned to make for dinner.

I looked up a recipe, to get an idea of the measurements used, and then winged it. It turned out super yummy and I can't wait to have it with dinner tonight!
